Gobble Gobble Gobble...

We spent Thanksgiving with friends - I charged my camera battery, but it never found it's way out of my purse. It was really fun getting to know and be a part of the dynamics of a good friend's family. HH was on a trip as usual, so we missed having him here, but it sounds like he was well taken care of by his co-workers and passengers. We ate a lot of food. I made this. It was delicious and was a big hit. Next time however I think I'll double the cream cheese part so it is more of a cheesecake than a pie. I also used this recipe for my whole wheat crust - fantastic!

D had a great little Thanksgiving program at preschool. It is so cute how they all just clam up when put in front of their parents. D was one of the only ones actually singing and doing the hand motions - he's such a performer. I've decided he is probably going to choose one of two career paths in his adult years - something in the medical field OR something in the performing arts. He is so quick at memorizing things. Just recently he came home from preschool knowing The Pledge of Allegiance word 4 word. And he is always such a good patient at the doctor or dentist, with a great pain tolerance.

E finished up this years soccer season last week. He did so well in the beginning, being the fastest and most aggressive, but throughout the season the other players got better and by the end it was pretty much just tackle soccer! They were all always fighting for the ball and bunched up on the field. They were all very good sports though and it was a fun first season for us.

The weather here has been wonderful! We are enjoying our spectacular winter sunshine and 76 degree days. Also loving the brisk morning air and the chance to wear a jacket for at least an hour each day. HH is spending a lot of time of the disc golf course and is winning little competitions around here. He is also training for the Rock N Roll Marathon here on January 17th.

Because I've been doing too much gobbling lately - tis the season - I've decided to make a diet change starting on Monday - I am excited to do this! Even though I eat quite healthy, well balanced meals regularly I am hoping to widen my perspective on different foods and thus accomplish some more physical goals. More details on Monday.

I still plan to gobble gobble gobble - just a little differently. :)

KISS

I've often been asked how I get healthy meals on the table w/o spending too much money while keeping things tasty enough that all in the house will eat. I've explained a few times before how I keep our grocery bill around $50/week...read through my previous posts to find out just how - if you're interested.

Last night was a perfect example of how I use the foods we purchase regularly to put together a quick and very tasty meal that is not only healthy and satisfying, but in this instance, vegetarian - yeah!



On the plate:
Pumpernickel toast with fresh onion, spinach, tomato and melted Monterey Jack Cheese
Fresh boiled corn cut off the cob
Roasted Cauliflower (w/olive oil, garlic salt and pepper)
Fresh sliced pear

Total prep and cooking time: 20 minutes
Kid variation - sans the onion, spinach, and tomato - I did not feel like fighting them on that one last night.
